Soup - Broccoli-Potato Soup with Greens

Broccoli-Potato Soup with Greens

Ingredients
  • 2 medium red potatoes, chopped
  • 1 14 1/2 ounce can reduced-sodium chicken broth
  • 3 cups small broccoli florets
  • 2 cups milk
  • 3 tablespoons all-purpose flour
  • 2 cups smoked Gouda cheese, shredded (8 ounces)
  • Ground black pepper
  • 2 cups winter greens (such as curly endive, chicory, romaine, escarole, or spinach)
  • Shredded Gouda cheese (optional)


Directions
  1. In large saucepan combine potatoes and broth. Bring to boiling; reduce heat. Simmer, covered, for 8 minutes. Mash slightly. Add broccoli and milk; bring just to simmering.
  2. In a medium bowl toss flour with the 2 cups cheese; gradually add to soup, stirring cheese until melted. Season to taste with pepper. Ladle soup into shallow serving bowls. Top with greens and additional cheese.


This soup was killer! 

Is that enough of a recommendation for you? Fine, I'll write some more. 

I made this this thinking, "This will be good, but probably not my most favorite meal ever." 

Well...this WAS great! And I WILL be making this again. 

The Gouda cheese adds this flavor that is incredible and really gives the meal the punch that it needs. It's not bland because of the Gouda cheese. 

I used spinach for the greens. I like spinach, don't judge me. For the Gouda, it is a little on the pricey side, but it is worth it to spend the extra bucks for this meal because I feel like it made the meal. But that's just my opinion. You could probably use whatever cheese you like though. 

According to the actual recipe, it makes 4 servings. I would say that is right if your serving sizes are a small bowl. And if you're on a diet, then that's good. But this soup was gone the night I made, keep in mind that there are 2 of us in this house. I think I'll probably double up on the recipe next time so we have leftovers. 

Try it at least once with the Gouda cheese, then you decide.
