Chicken - Thai Peanut Chicken by 365 Days of Slow Cooking

Pinterest is an amazing place to explore all different things. My friends love Pinterest as much as I do and when they try something from it, they let me know. I'm not as good about reciprocating, which I should be, but maybe I'll just use my blog to let my friends know what I tried that worked well for me.

I found this Thai Peanut Chicken recipe on Pinterest. It was linked to this blog:

I love using the crock pot. It is just so easy and I don't think I've ever made anything in it that tastes like crap. When I saw this recipe, I know I had to try it. I love all different types of food and Thai food is no exception. When I saw how easy it was to make, it was going on my "MAKE THIS RIGHT AWAY" list of meals for the week. 

And so, I made it. 

Here is what the lovely blogger posted:

Ideal slow cooker size:  3 quart
Cooking time:  3-5 hours

12 oz linguine or fettuccine noodles, cooked and drained
2 cloves garlic, minced
2/3 cup peanut butter (creamy or chunky...it's up to you)
1 cup chicken broth
1 lb boneless, skinless chicken breasts, cut into 1 inch cubes or sliced into 1/2 inch slices
1 cup shredded zucchini
1/3 cup soy sauce
1 Tbsp tapioca
1 tsp sugar
1 red pepper, cut into thin, long strips (It will seem like a lot but put it all in there)
1 tbsp (or more to taste) FRESH lime juice
1/2 cup chopped cilantro, for garnish
1/2 cup chopped peanuts, for garnish

1.  Add garlic, peanut butter, broth, tapioca, soy sauce, sugar to a bowl.  Whisk until smooth.  Add to slow cooker.
2.  Stir in the zucchini, chicken and red pepper to the slow cooker.
3.  Cover and cook on low for 3-5 hours (the cut chicken breasts don't take much time to cook).
4.  When chicken is cooked through and tender add in the lime juice.  Spoon sauce and chicken over noodles and top with cilantro and peanuts.



And here is my review:

When I walked in from work and smelled the sauce and chicken cooking, I thought it smelled weird and had a little bit of panic. This could also be that we have 2 cats and a dog which = smelly house. That's for another post (I try to keep shit cleaned, but it's hard when you have a bunch of filthy and sweet animals). 

Anyway, I opened the lid of the crock pot to stir the ingredients a bit and still thought it smelled funky. But then I decided to have a quick taste. After that, my stomach was growling and I was feeling faint. If I didn't consume this meal soon, I might die! 

I then prepared the noodles, I bought some Pad Thai Noodles so the meal would be more authentic, and yelled to Rob to come eat.

This meal was SOOO easy and SOOO tasty. I honestly don't think there would be anything I would change to the recipe, I loved it. I guess if I was required to change one thing, I might add some type of spice to heat it up. This dish has no "kick to the lips" at all, which is fine, but sometimes I really crave spicy food. 

Overall, I think if you like trying different types of food, try this. The good thing, it sounds different, but I don't think it really is out of a picky eater's comfort zone.
