Here is another very good crock pot dish I think everyone should make at least once. It is very filling which is good. I think it would serve probably 4-6 people easily. It's also cheap to make, so when you are low on bucks, pick this because you will probably have more than one meal from it and you can afford it.

Crock Pot Cheesy Potato Soup
Ingredients
6-10 potatoes, peeled and cubed
1/2 cup vegetable broth
1 cup water
1 large onion, finely chopped
1/2 tsp garlic powder
1/8 tsp white pepper
2 cups milk, heated
1 cup shredded cheddar cheese, sharp or extra sharp
Directions
1. Combine potatoes, vegetable broth, water, onions and garlic powder in the crock pot
2. Cook on low for 7-9 hours, high for 4-6 hours
3. Mash potatoes, stir in pepper and milk a little at a time, add in cheese
4. Cook until cheese has melted, add milk depending on how thick you want the soup
Top with bacon, green onions and additional cheese

This was very easy to make and I'm so glad we did make it. Now I know what to do with extra potatoes if I ever buy a bag.
Is there anything I would change you ask? Hmm...well I don't think so. Yeah, I don't think I would do anything different. I had a bowl of this and was satisfied, my belly was full, but then when I went to clean my dish out, I had to have more. It's just good, and it was perfect for the cold night that we had last night.
If you have a bunch of potatoes you don't know what to do with, it's cold, and you are debating what you want to make that is cheap, then make this soup. You won't regret it.
