Breakfast - Healthy French Toast

Healthy French Toast? 
I must be out of my mind. Right? 

No! I actually feel pretty good about making this. 



I've been getting up earlier in the morning to make breakfast for a few different reasons, one of them being it's one of my favorite meals. I'm not going to get up an hour earlier though to make breakfast, so the meals I make in the morning have to be fairly fast. 

This was a fairly fast breakfast to make. 

I even cleaned all the dishes before I got dressed. 

Ingredients
  • 3 large egg whites
  • 3/4 cups milk
  • 1/4 teaspoon vanilla extract
  • Salt
  • 2 teaspoons coconut oil
  • 8 slices firm whole wheat bread
  • Maple syrup (optional)
  • Fresh blackberries, raspberries, and blueberries (optional)


Directions
  1. In bowl, whisk together eggs, milk, vanilla, and 1/2 teaspoon salt until blended. 
  2. In 12-inch nonstick skillet, melt 1 teaspoon coconut oil on medium.
  3. Dip bread slices, 1 at a time, in egg mixture, pressing bread lightly to coat both sides well. Cook 1 to 2 slices (whatever fits in/on your skillet) 6 to 8 minutes or until lightly browned on both sides.
  4. Serve French toast with maple syrup and berries if you like.

If you look at the recipe on the Delish website, you can see that I made a few changes. 

I'm trying to cook more with coconut oil rather than olive oil, vegetable oil, or butter. That's only a preference though, you can use what you like. 

Also, I have no reason to use 2 eggs and 1 egg white, I believe that is for dietary reasons (right?). I used all 3 eggs for this recipe. I may have (I don't remember) used 4 eggs. This batch made exactly 4 pieces of french toast though. Perfect for a fast breakfast.
