Tuna - Spicy Tuna Salad

When I was looking for healthy, simple things to make, I found something I knew I had to try, at least one time. 

SPICY TUNA SALAD

I have made this twice now and plan to continue making it at least twice a month. It's so ridiculously easy to make, filling, and damn good. And BONUS...IT IS HEALTHY! 


My pictures aren't that great, I don't know why I get shaky when I take pictures with my phone, but it causes camera shake so bad I cringe. 

Anyway, this was very easy to make. the only thing I did differently the second time was make it more spicy. 

This is going to be a staple in our diets going forward, if that gives you any clue on how much it's worth trying...at least one time!


Something I really like about the Paleo Plan's recipes is reading the reviews people have posted. The suggestions people include are great and helpful.

Ingredients

  • 2 cans tuna (oil-packed recommended)
  • 20 (about 1 cup) green or black olives, chopped
  • 2 green onions, chopped
  • 1 jalapeno pepper, finely chopped (no seeds and/or less jalapeno if you want less spice)
  • 3 Tbs capers, rinsed
  • 1/2 tsp red chili flakes
  • juice of 2 lemons
  • splash of olive oil
  • 1 head butter lettuce or mixed greens (optional)
  • 1 avocado, sliced

Instructions

  1. Combine all the ingredients and serve over lettuce, with sliced avocado on top.
  2. Serve immediately, or store it in the fridge for a day for more flavor. NOTE: always be sure to add the avocado just before serving.

I'm not a huge fan of tuna, but I think I might try this!

I think you won't mind it because of the other stuff in it. It's not your typical tuna fish taste. It's good, I promise!
